Crisp Bacon Muffins

Ingredients:

8 Unit Bacon (optional)
1 1/3 Cups Cake Flour (sifted)
1 1/2 Tablespoons Sugar confectioner'
1 Teaspoon Salt approximately
2 1/2 Teaspoons Baking Powder plus 1 teaspoon
1 Unit Egg beaten + 1 ts
3/4 Cup Milk (or use about 1/2 C of powdered milk and about 1 C water)
1 Tablespoon Bacon or butter

Directions:

1. Saute bacon til crisp, and chop fine.

2. Sift flour, sugar, salt and baking powder together.

3. Add the bacon. Combine the egg, milk and bacon fat, and blend into the first mixture.

4. Pour into buttered muffin tins, one-third full, and bake in a hot oven (425) for 15-20 minutes.
