Crispy Cheese Fritters

Ingredients:

1/4 Cup Cornstarch
1 Teaspoon Cayenne Pepper
1 3/4 Cups Flour
2 Eggs beaten
1 Pound Mozzarella Cheese shredded
4 Tablespoons Chives chopped

Directions:

1. Mix 1 cup flour with the cheese, eggs, chives, cayenne pepper and a pinch of salt.

2. Shape the mixture into 24 balls.

3. Combine the remaining flour with the cornstarch and roll the balls in the mixture to coat lightly.

4. Heat the oil until hot enough to brown a bread cube in 50 seconds.

5. Deep-fry the fritters in small batches, turning several times once they rise to the surface.

6. Fry until golden and puffed.

7. Drain on paper towels. Serve warm.
