Crispy Potato Squares

Ingredients:

1 1/2 Teaspoons Salt 1 t.
1 Onion chopped fine
1/4 Cup Vegetable Oil or bacon grease
1/4 Teaspoon Pepper black, cracked
2 Tablespoons Flour plus additional
2 Eggs separated
6 Potatoes pared and shredded

Directions:

1. Pour 3 T oil into an 8" square pan.

2. Heat in 425 oven while preparing potatoes. Drain potatoes and onion thoroughly.

3. Squeeze in a towel if necessary to remove all the liquid.

4. Mix the potato and onion mixture with the egg yolks, flour, salt and pepper.

5. Beat egg whites until still but moist peaks form; fold gently into the potatoes.

6. Remove the pan from the oven and spoon in the potato mixture.

7. Sprinkle the remaining 1 Tbs. oil over the top.

8. You may use 1 Tbs. butter or margarine instead of the oil.

9. Bake in a 425 oven for 45-60 minutes or until tender an crustly brown.

10. Cut in squares and serve as soon as possible.
