Ingredients:

1/4 Cup Butter
1/2 Cup Flour (00 type)
6 Eggs Large, Beaten
1 Cup Milk (or use about 1/2 C of powdered milk and about 1 C water)
1 Pound Monterey Jack Cheese cubed
3 Ounces Cream Cheese softened (1 package)
2 Cups Cottage Cheese optional (2 to 3)
1 Teaspoon Baking Powder plus 1 teaspoon
1 Teaspoon Salt approximately
1 Teaspoon Sugar confectioner'
1 Unit Bacon cooked crisp and crumbled (optional)

Directions:

1. Melt butter in small saucepan.

2. Add flour and cook until smooth; set aside.

3. Beat eggs; add milk, Monterrey Jack cheese, cream cheese and cottage cheese.

4. Stir in baking powder, salt, sugar and butter-flour mixture, mixing until well blended.

5. Pour into a well-greased 9x13x2-inch pan. Bake uncovered at 350 degrees for 45 minutes.
