4 Unit Chicken Breasts halved, skinless, boneless
3 Tablespoons Olive Oil or corn oil
3/4 Teaspoon Salt approximately
1/2 Teaspoon Pepper hot red
1 Unit Onion chopped
2 Unit Cloves Of Garlic minced
1 Carrot chopped
1 Tablespoon Lemon finely grated
1 Tablespoon Fresh Sage chopped or 1 ts dried
1 Tomato peel
1/3 Cup Chicken Stock low fat, low sodium, plus 2 teaspoons
3 Tablespoons Lemon Juice (either a shots-worth or a tablespoon would do)
1 Unit Leaves Sage finely chopped
1 Unit Lemon (optional)

1. Remove skin from chicken; debone if desired.

2. In large skillet, heat oil over medium heat; cook chicken and pinch each of salt and pepper, turning once, for 5-7 minutes or until lightly browned.

3. Remove to plate; cover and keep warm. Add onion, garlic and carrot to pan; cook, stirring, for about 5 minutes or until onion starts to turn golden.

4. Stir in lemon rind, sage and remaining salt and pepper; cook for 1 minute.

5. Stir in tomato and chicken stock, stirring to deglaze pan.

6. Bring to boil. Reduce hat and return chicken to pan; cover and simmer for 15 minutes, turning chicken once.

7. Stir in lemon juice; cook, uncovered, for 5-10 minutes or until chicken is no longer pink inside.

8. Serve with pan juices. Garnish with sage leaves and lemon slices.

9. ] Serve with fluffy rice and lightly sauteed zucchini.
