Curried Coconut Soup

Ingredients:

1 Unit Onion chopped (1/4 cup)
1 Teaspoon Curry Powder to taste
1/4 Cup Water Heated To 105F
3 Cups Milk (or use about 1/2 C of powdered milk and about 1 C water)
1 Cup Coconut toasted if desired
2 Unit Whole Cloves (up to)
1/2 Teaspoon Salt approximately
2 Unit Eggs
1 Unit Coconut

Directions:

1. In 2-quart saucepan cook onion and curry powder in water till onion is tender.

2. Stir in milk, coconut, cloves, and salt. Simmer, covered, for 15 minutes.

3. Strain mixture through a sieve.Stir about 1 cup of the hot milk mixture into the egg yolks.

4. Return to remaining milk mixture in saucepan.

5. Cook and stir about 2 minutes or till mixture thickens slightly.

6. Remove from heat; cover and chill. Garnish each serving with toasted coconut if desired.
