Deep-Fried Carrot Balls

Ingredients:

2 Slices Fresh Ginger finely ch
1/2 Teaspoon Salt 1 t.
1 Pound Carrot Diced
1 Scallion Stalk

Directions:

1. Scrape carrots.

2. Mince ginger root and scallion stalk. Bring water to a boil.

3. Add carrots and boil, uncovered, until soft but not mushy.

4. Then drain and mash. 3, Blend in salt, ginger root and scallion.

5. Form carrot mixture into walnut-size balls. Heat oil.

6. Deep-fry carrot balls, a few at a time, until golden.

7. Drain on paper toweling. Return carrot balls to oil; deep-fry 1/2 minute more.
