Deli-Style Pasta Salad

The is a simple recipe for a great carbohydrate-rich food to keep in the fridge as a snack, or to serve as a whole meal.

Ingredients:

7 oz Pasta Tricolor Spiral
6 oz Salami thinly sliced
6 oz Parmesan Cheese cubed
2 1/4 oz Olives sliced and drained
1 Red Onion small thinly sliced
1 Zucchini small halved & thinly sliced
1/2 cup Bell Pepper chopped green
1/2 cup Bell Pepper sweet red
1/4 cup Parsley minced
1/4 cup Parmesan Cheese grated
1/4 cup Olive Oil
1/4 cup Red Wine Vinegar
1 Clove Of Garlic minced
1 1/2 teaspoons Dry Mustard
1 teaspoon Dried Basil
1 teaspoon Dried Oregano
1/4 teaspoon Salt
Pepper dash
2 Tomatoes cut into wedges

Directions:

1. Cook the pasta according to package directions; rinse in cold water and drain.

2. Place in a large bowl; add the next nine ingredients.

3. In a jar with tight-fitting lid, combine oil, vinegar, garlic, mustard, basil, oregano, salt and pepper; shake well.

4. Pour over salad; toss to coat.

5. Cover and chill for 8 hours or overnight.

6. Toss before serving. Garnish with tomatoes.
