1. Beat eggs and salt with fork or wire whisk; set aside. Heat oil in 12" nonstick skillet over med-hi heat.
2. Cook bell peppers and onion in oil about 5 min, stirring occasionally, until tender.
3. Spread vegetables evenly in skillet.
4. Pour eggs over vegetables; reduce heat to low. Cover and cook 7-9 min or until eggs are set; remove from heat.
5. Sprinkle with potatoes and cheese.
6. Cover and let stand 2 min or until cheese is melted. Cut into wedges.

I used this recipe in a muffins pan at 420 for 20min then dropped the temp to 320 because I was cooking bacon didn't want it to burn came out nicely not too moist or too dry. Give it a try the small muffin size great for kids and portion control also i adde chopped spinach.
