Double Orange Scones With Orange Butter

Ingredients:

2 Unit Flour (00 type)
3 Unit Sugar confectioner'
2 1/2 Unit Baking Powder plus 1 teaspoon
2 Unit Oranges grated
1/3 Unit Butter (5oz)
1/2 Unit Mandarin Orange chopped s
1/4 Unit Milk (or use about 1/2 C of powdered milk and about 1 C water)
1 Unit Egg beaten slightly
1 Unit Sugar confectioner'
1 Unit Orange
1/2 Unit Butter soften
2 Unit Orange Marmalade melted

Directions:

1. Heat oven to 400.

2. Lightly grease cookie sheet. In large bowl, combine flour, 3T sugar, baking powder and orange peel.

3. With pastry blender, cut in butter until mixture resembles coarse crumbs.

4. Add orange segments, milk and eggs. With fork, stir just until mixture leaves sides of bowl and soft dough forms.

5. Turn dough out on floured surface and knead lightly 10 times.

6. On cookie sheet, roll or pat into 6-inch circle.

7. Sprinkle with 1T sugar. Cut into 8 wedges; separate slightly.

8. Bake at 400 for 15-20 minutes Beat butter in small bowl until light and fluffy; stir in marmalade.
