Double Pesto Tortellini With Shrimp

1 Cup Spinach trimmed spinach leaves
1/3 Cup Parmesan Cheese
1/4 Cup Liver or whole blanched almonds
1 Tablespoon Dried Basil crushed
1 Unit Clove Of Garlic minced
1/2 Teaspoon Salt approximately
1/4 Teaspoon Ground Pepper ;
1/3 Cup Olive Oil or corn oil
7 Ounces Tortellini
2 Tablespoons Olive Oil or corn oil
1/2 Cup Liver or whole blanched almonds
3/4 Pound Shrimp peeled and deveined
1 Unit Clove Of Garlic minced
1 Cup Cherry Tomato

1. Prepare pesto sauce by processing spinach, cheese, 1/4 c.

2. almonds, basil, garlic, salt, pepper and 1/3 c.

3. olive oil in a blender or food processor until smooth.

4. Cook tortellini in a large pot of rapidly boiling salted water, for about 25 minutes or until tender, stirring occasionally.

5. Drain. In a medium frying pan over medium heat, saute almonds in 2 tablespoon oil until golden.

6. Remove with slotted spoon; drain. Add shrimp and garlic to pan; saute until shrimp are cooked.

7. Remove from pan. Add cherry tomatoes to pan.

8. Saute for 1 minute. Remove from pan. Add pesto sauce to pan; heat through.

9. Combine tortellini and all cooked ingredients with the pesto sauce in a large bowl.

10. Toss to blend; serve immediately. Yield: 4 to 6 servings.
