Easy Enchilada Sauce

Ingredients:

1 Teaspoon Dried Oregano
2 Cups Chicken Stock
1 Teaspoon Cumin Seed Ground
3 Tablespoons Vegetable Oil
1 Tablespoon Flour
1/4 Cup Chili Powder
10 Ounces Tomato Paste
1/2 Teaspoon Salt coarse

Directions:

1. In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute.

2. Add chili powder and cook for 30 seconds.

3. Add stock, tomato paste, oregano, and cumin.

4. Stir to combine.

5. Bring to a boil, reduce heat to low and cook for 15 minutes.

6. The sauce will thicken and smooth out. Adjust the seasonings.

7. Serve atop your favorite enchiladas. This recipe yields 2 1/2 cups of sauce.
