Easy Homemade Pumpkin Bread

Ingredients:

1/2 Cup Pumpkin
1 Cup Flour plus extra flour for dredging
2 Eggs beaten; for glaze
1 1/2 Teaspoons Baking Powder soda
1 Teaspoon Pumpkin Pie Spice OR
4 Tablespoons Currants soaked 15 minutes in warm water and drained
2 Tablespoons Vegetable Oil plus extra for
1/2 Cup Brown Sugar packed

Directions:

1. In small bowl combine flour, baking powder and pumpkin pie spice.

2. In med. mixing bowl combine brown sugar and oil; beat till well combined.

3. Beat in eggs. Add pumpkin; mix well. Add flour mixture.

4. Beat just till combined. Stir in raisins. Pour pumpkin mixture into 2 well-greased and floured 1/2-pint straight-sided canning jars.

5. Cover jars tightly w/greased foil. Place a piece of crumpled foil in 3 1/2 or 4 qt.

6. crockery cooker with liner in place. Place jars atop crumpled foil.

7. Cover; cook on high setting for 1 1/2 to 1 3/4 hrs.

8. or till a wooden toothpick inserted near centers comes out clean.

9. Remove jars from cooker; cool 10 minutes in jars.

10. Remove bread from jars. Cool thoroughly on wire rack.

11. Makes 2 loaves. For 3 1/2 to 4 qt. cooker, half all ingredients.
