Easy Pad Thai

An exotic meal that takes little time to prepare. The red pepper, and hot pepper flakes will make you take notice of this meal. Combined with noodles a filling meal is made.


6 1/2 Ounces Noodles
2 Tablespoons Vegetable Oil (for frying)
6 Ounces Lean Ground Pork or chicken
1 Unit Sweet Red Pepper chopped
3 Unit Cloves Of Garlic minced
1/4 Teaspoon Hot Pepper Flakes to taste
6 Ounces Raw Shrimp peel
1/3 Cup Chicken Stock low fat, low sodium, plus 2 teaspoons
3 Tablespoons Fish Sauce Nuoc Mam
2 Tablespoons Sugar (5.5 oz)
2 Tablespoons Lime Juice fresh-squeezed
2 Tablespoons Ketchup (optional)
1 Unit Egg beaten
2 Cups Bean Sprouts drained
2 Unit Green Onions chopped
1/4 Cup Coriander chopped
2 Tablespoons Peanuts chopped
2 Unit Limes cut in wedges

1. Soak noodles in warm water for 15 minutes; drain and set aside.

2. In large wok or deep skillet, heat oil over high heat; sir-fry pork, red pepper, garlic and hot pepper flakes for 2 minutes.

3. Add shrimp; stir-fry for 1 minute. Stir in stock, fish sauce, sugar, lime juice and ketchup; stir-fry for 1 minute.

4. Add noodles; toss. Drizzle in egg, tossing until egg is set.

5. Add bean sprouts; toss. Sprinkle with onions, coriander and peanuts.
