A easy to make soup that has a simple mix of flavors that will get anyone asking for more. Perfect for those cooler nights when a bowl of nice hot Easy Potato-Leek Soup will work its wonders.

Ingredients:

1 1/2 Pounds Leeks cleaned and sliced thin quot
2 Onions peeled and quartered
9 Cups Chicken Broth or stock
3 1/4 Pounds Russet Potatoes peeled and cubed
1/2 Teaspoon Pepper to taste

Directions:

1. Put the leeks, onions and broth in a pot.

2. Bring to a boil. Reduce the heat; cover. Simmer for 25 minutes.

3. Add the potatoes; return to a boil. Cover and simmer for 20 minutes, or until the potatoes are tender.

4. Process in a blender until smooth. Stir in the pepper.

5. TO SERVE AFTER FREEZING: Thaw as recommended.
