Easy Rich Raisin Cake

You can also add beaten eggs to make it more fluffy. Just sprinkle some cinnamon dust to enhance taste and make it perfect to serve with a cup of hot tea or coffee and serve it to your guest.

Ingredients:

1 Pound Raisin soaked for an hour in:
1 Cup Sugar Brown Water
3/4 Cup Lard no substitute
1 3/4 Cups Oatmeal (Quick or old fashioned
1 3/4 Cups Flour all-purpose
1 Teaspoon Baking Soda level - dissol ved in milk
1 Cup Brown Sugar heaping

Directions:

1. Cook raisins till soft in water.

2. Add 1 cup sugar or enough to sweeten. Add a little vinegar to taste and thicken with cornstarch mixed with a little water to make a paste.

3. Mix shortening, baking soda, salt, brown sugar and flour like you do for pie crust.

4. Grease pan and put crumbs in bottom. Pour on raisin mixture, put rest of crumbs on top.

5. Bake in a quick oven. Serve with ice cream or whipped cream.
