Another favorite egg salad recipe of mine.

Ingredients:

1/4 cup Celery chopped
2 Green Onions chopped
1/4 cup Light Mayonnaise
2 tablespoons Sweet Relish
1 tablespoon Dijon Mustard
1/4 teaspoon Turmeric
1/4 teaspoon Salt
1/8 teaspoon Cayenne Pepper
12 oz Tofu silken firm , cubed
8 slices Whole Wheat Bread
4 Lettuce leaves

Directions:

1. In a small bowl, combine the first eight ingredients.

2. Gently stir in tofu. Spread over four slices of bread; top with lettuce and remaining bread.
