Elvis' Hush Puppies

Ingredients:

1 Teaspoon Baking Powder
2 Cups Cornmeal (1/2 oz)
1 1/2 Cups Buttermilk warmed
1 Teaspoon Baking Soda (dissolved in a little warm water)
1 Teaspoon Salt pepper, and tabasco to taste
1 Tablespoon All-Purpose Flour up to 3
1/2 Cup Onion chopped
1 Egg well beaten

Directions:

1. Heat oil in a large saucepan or deep fryer to 375 degrees.

2. Combine cornmeal, chopped onion, flour baking powder, baking soda and salt.

3. Make a well in center of dry ingredients; add well beaten eggs and buttermilk at the same time.

4. Mix until blended. Form into small cakes, about 1 tablespoon each.

5. Drop hush puppies into deep fryer, a few at a time.

6. Fry 3 to 4 minutes, until well browned. Turn with fork or tongs as they float to the surface.

7. Remove with slotted spoon and drain on paper towels.
