Favorite Corn Bread

Ingredients:

4 Teaspoons Baking Powder
3/4 Teaspoon Salt pinch
1/4 Cup Sugar (for decoration)
1 Cup Cornmeal (1/2 oz)
2 Eggs Hard Cooked
1/4 Cup Shortening (solid)
1 Cup All-Purpose Flour (see NOTE1)
1 Cup Milk (1 litre)

Directions:

1. In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt.

2. Add the milk, eggs and shortening; beat for 1 minute.

3. Pour into a greased 9" square baking pan. Bake at 425 F for 20-25 minutes or until bread is golden brown and tests done.
