Fettuccine Alfredo Family Recipe

Ingredients:

1 Tablespoon Margarine not butter!
2 Cloves Of Garlic minced (up to 25)
1 Tablespoon All-Purpose Flour sifted
1 1/3 Cups Skim Milk chilled
2 Tablespoons Cream Cheese
1 1/4 Cups Parmesan Cheese divided
4 Cups Fettuccine - cooked without salt or fat
2 Teaspoons Fresh Parsley
1 Unit Ground Pepper ;

Directions:

1. Melt margarine in a saucepan over medium heat.

2. Add garlic; saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whisk until blended; cook minutes or until thickened and bubbly, stirring constantly.

3. Stir in cream cheese, cook 2 minutes. Add 1 Parmesan cheese, stirring constantly until it melts.

4. Pour over hot cooked fettuccine; toss well to coat.

5. Top with remaining 1/4 cup Parmesan cheese, fresh parsley, and pepper.
