Ingredients:
1 Cup Dates chopped
1 Cup Water warmed
1 Cup Sugar confectioner'
3/4 Cup Shortening (Crisco)
1 Teaspoon Vanilla or Almond extract to
1 1/2 Cups Oatmeal regular, uncooked
1 1/2 Cups Flour (sifted----yikes)
1/2 Teaspoon Soda dissolved in milk
1/2 Teaspoon Salt approximately
1/4 Cup Milk (or use about 1/2 C of powdered milk and about 1 C water)
1. Combine dates, water, sugar and cook in saucepan until thick.
2. Sift together flour, soda and salt. Add milk, egg and sugar, shortening and vanilla.
3. Beat until smooth about 2 minutes. Lightly stir in rolled oats.
4. Turn out half the dough on lightly floured board.
5. Knead gently 2 or 3 times. Roll very thin, repeat with other half of dough.
6. Cut, fill and bake at 375 degrees for 15 minutes.
