Fluffy Fruit Salad

Ingredients:

Cup Sugar (for decoration)
2 Tablespoons Flour plus extra flour for dredging
1/4 Cup Orange Juice
1 Tablespoon Vegetable Oil or bacon grease
3 Tablespoons Lemon Juice (30 ml)
2 Eggs lightly beaten
2 Bananas sliced
1 Cup Heavy Cream whipped
2 Cans Crushed Pineapples 20 ozs each
2 Cans Fruit Cocktail 17 ozs each, drained
2 Cans Mandarin Oranges 11 ozs each, drained

Directions:

1. Drain pineapple, reserving 1 cup juice in a small saucepan.

2. Set pineapple aside. To saucepan, add sugar, flour, eggs, orange juice, lemon juice, and oil.

3. Bring to a boil, stirring constantly. Boil for 1 minutes; remove from heat and let cool.

4. In a salad bowl combine the pineapple, fruit cocktail, oranges and bananas.

5. Fold in the whipped cream and cooled sauce. Chill for several hours.
