Garlic Shrimp Au Gratin

Ingredients:

2 Pounds Raw Shrimp chopped finely
1 1/2 Unit Butter
2 Cups Dry Bread Crumbs (half whole wheat preferred)
1/2 Cup Parsley
4 Unit Garlic pressed
1 Unit Pepper
1 Cup Dry Sherry or 1/4 cup orange juice

Directions:

1. Shell and devein shrimp.

2. Toss into boiling water, return to boil and cook for about 2 minutes until shrimp turn all pink.

3. Drain. In large skillet melt 1 stick butter (1/2 cup) over low heat.

4. Add bread crumbs, parsley, garlic and salt and pepper.

5. Stir a few minutes over low heat; pour in sherry and cook 1 minute more.

6. Place alternate layers of shrimp and bread crumbs in well-buttered gratin dish, ending with bread crumbs.

7. Dot with remaining butter. Bake at 350 degrees for 10 to 15 minutes.
