Gentle Lentil Soup

Ingredients:

2 1/2 Cups Lentils rinsed and drained
7 Cups Water or stock
2 Onions chopped
3 Unit Cloves Of Garlic minced (up to 4)
1 Unit Lemon
1 Unit Pepper
2 Unit Celery chopped
2 Tablespoons Olive Oil use a good one
1 Unit Spinach chard or collards, washed and chopped

Directions:

1. Saute onions, garlic and celery in the olive oil, 5-10 minutes Add lentils, and water or stock and simmer until lentils are very soft.

2. If necessary, add more water to get soup to desired consistency.

3. Add greens, salt and pepper. Simmer for 10 more minutes or until greens are tender.
