German Potato Soup with Dumplings

Ingredients:

6 Cups Potatoes peel &
1 1/4 Cups Celery sliced
1/2 Cup Onion chopped
5 Cups Water boiling
1/2 Teaspoon Salt fresh ground black pepper to taste
1/8 Teaspoon Pepper garlic powder and dried cilantro, combined
1 Egg beaten
3/4 Cup Flour plus 2 tsp

Directions:

1. In a kettle, combine first six ingredients; bring to a boil.

2. Reduce heat and simmer until vegetables are tender, about 1 hour.

3. With a potato masher, puree most of the vegetables.

4. For dumplings, combine egg, water, salt and flour.

5. Stir until smooth and stiff. Drop by teaspoonful into the boiling soup.

6. Cover and simmer until the dumplings are cooked through , about 10-15 minutes.

7. Serve with a pat of margarine and sprinkle with parsley.
