Ingredients:

1 Teaspoon Butter clarified **
1 Cup Water room temperature
1/2 Teaspoon Salt pepper,sugar to taste
1 Cup Flour white or unbleached
3 Eggs (250 g)
1 Cup Parmesan Cheese grated

Directions:

1. Bring first three ingredients to a boil.

2. Add 1 cup flour and stir over heat until the dough leaves the spoon.

3. Add 1 whole egg while dough is hot. Add 2 more eggs after 5 minutes when well mixed.

4. Add 1 cup grated Parmesan cheese. Drop the dough with a tablespoon into large saucepan of boiling, salted water.

5. When dumplings rise, let boil slowly for 3 minutes.

6. Dry on a towel, then put layer of dumplings in flat baking dish and cover with cream sauce and grated cheese.

7. Bake in 400 to 450 oven until golden brown. Cream Sauce: Make bechamel sauce with veal or chicken stock and a little cream to which grated American or Parmesan cheese has been added.
