These healthy cookies have a satisfying crunch as you eat them, and make a great after school snack. The kids will never know they are eating food that's good for them; they just know they taste great.

Ingredients:

1 Cup Shortening (Crisco)
3/4 Cup Brown Sugar packed
2 Unit Eggs hard-cooked &
2 Tablespoons Vanilla grated lemon zest or orange zest
3 Cups Flour (00 type)
1 1/2 Teaspoons Cream Of Tartar add
1 Teaspoon Baking Powder double acting
1 Teaspoon Salt approximately
3 Cups Raisins
1 Cup Milk (or use about 1/2 C of powdered milk and about 1 C water)

Directions:

1. Cream shortening with sugar, eggs and vanilla.

2. Sift flour with cream of tartar, baking powder and salt.

3. Add granola to creamed mixture. Add flour mixture alternately with milk.

4. Drop by heaping teaspoons onto greased baking sheets and bake at 350F 12 to 15 minutes.
