Green Buttermilk Pancakes

Perfect for St. Patty's Day!

Ingredients:

1 cup Flour
2 tablespoons Sugar
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Buttermilk
2 tablespoons Butter melted or Vegetable Oil
1 Egg
1 teaspoon Food Coloring , green

Directions:

1. Sift flour, sugar, baking soda and salt into a medium bowl. Whisk buttermilk, melted butter and egg in a large bowl.

2. Gently fold flour mixture into buttermilk.

3. Add 5 drops of green food coloring. Do not over-mix: batter should have pea-size lumps.

4. Pre-heat griddle.

5. Ladle 3-4 tablespoons batter for each pancake onto griddle and cook until golden brown and holes begin to appear on top.

6. Turn and cook second side.

7. Serve immediately with butter and syrup.
