Grilled Cajun Chicken Salad

Ingredients:

1 Tablespoon Butter small lump
1 Teaspoon Sugar
1/4 Teaspoon Ground Red Pepper to taste
1/2 Cup Walnut chopp
1/2 Pound Chicken Breast boneless, skinless
1 Teaspoon Cajun Seasoning to taste
1/2 Pound Smoked Andouille
6 Cups Salad Greens torn
1/2 Cup Red Bell Pepper cut in strips
1 Cup Mustard

Directions:

1. Melt butter in small skillet over medium heat.

2. Stir in sugar and ground red pepper; blend well.

3. Stir in nuts to coat. Cook and stir over medium heat 4-5 minutes or until nuts are lightly toasted.

4. Remove from heat; cool completely. Heat grill.

5. Sprinkle cajun seasoning over chicken. When ready to grill, place chicken breast and sausage on gas grill over medium heat or on charcoal grill 4-6" from medium coals.

6. Cook 10-15 minutes or until chicken is tender and juices run clear, turning once.

7. Cook sausage 15-20 minutes, turning frequently.

8. Cut chicken into strips; cut sausage into 1/2" slices.

9. Line 6 salad plates with greens and red bell pepper strips; arrange chicken and sausage on top.

10. Sprinkle with spiced nuts. Serve with dressing.
