Grilled Gingered Swordfish

The marinade in this swordfish recipe gives you a great Asian flavor, nearly a Teriyaki style. The sweet and pungent flavors make and most of this fish.

Ingredients:

6 Unit Swordfish 1" thick
3/8 Cup Dry Sherry or 1/4 cup orange juice
1 1/2 Unit Cloves Of Garlic mince
2 1/4 Teaspoons Ginger mince
1 1/2 Teaspoons Lemons grated
1 Cup Soy Sauce ;
1 1/2 Unit Carrots small
1 1/2 Tablespoons Red Bell Peppers nince
3 Unit Scallions small
3 Tablespoons Extra Virgin Olive Oil plus
