This is a delicious fresh fall side dish or appetizer that adds a beautiful splash of color to the dinner table! Easy and tasty.


1 1/2 tablespoons Red Wine Vinegar
3/4 teaspoon Salt
1/2 teaspoon Dijon Mustard
1/4 teaspoon Pepper
1/4 cup Vegetable Oil olive or
3 lb Heirloom Tomatoes mixed , halved if small or cut into 1/2-inch wedges if medium or large

1. In a large bowl, mix together vinegar, salt, mustard, and pepper.

2. Add oil slowly, mixing constantly until dressing is emulsified.

3. Add tomatoes and gently toss.
