Homemade Banana Nut Bread

Ingredients:
3/4 Cup Margarine 3/4 Cup Margarine or butter
1 Cup Sugar 1 Cup Sugar
2 Unit Eggs 2 Unit Eggs separated
1/2 Teaspoon Baking Soda 1/2 Teaspoon Baking soda level - dissol ved in milk
1/2 Teaspoon Salt 1/2 Teaspoon Salt and pepper to taste
3 Unit Ripe Bananas 3 Unit Over-ripe bananas
1 Cup Pecan 1 Cup Pecans chopped
2 Cups All-Purpose Flour 2 Cups All-purpose flour plus
1. Cream margarine and sugar; add egg yolks (only) and salt.
2. Add flour and blend. Combine soda with the mashed bananas.
3. Fold in well-beaten egg whites. Add nuts. Pour into 2 small or 1 large greased loaf pans.
4. Bake at 350 degreees for 30 to 40 minutes or until toothpick inserted in center comes out clean.
