Homemade Enchilada Sauce

Ingredients:

1 1/2 Cups Chicken Broth vegetable broth or water
1/2 Teaspoon Thyme Leaves fresh -- chopper OR
1 Tablespoon Flour All-purpose
1/2 Teaspoon Oregano (optional)
1 Teaspoon Cumin Seed mustard seeds
1 Tablespoon Lime Juice up to 3
1/2 Teaspoon Cayenne Pepper or to taste
1 Clove Of Garlic minced
1 1/2 Tablespoons Olive Oil or lard
1/2 Cup Puree Tomato to 1 cup

Directions:

1. In a large heavy skillet saute the flour and oil over medium heat for 1 minute.

2. Add herbs and spices and garlic. Cook 1 more minute, and then add broth, tomato puree and lime juice.

3. Raise heat to high and boil, stirring constantly until thickened.
