Homemade Potato Pancakes

Ingredients:

1 Cup All-Purpose Flour sifted
2 Teaspoons Baking Powder plus
1 1/2 Teaspoons Salt (non iodized)
1/2 Teaspoon Pepper hot red
2 Eggs in shell (up to 8)
1/4 Cup Butter melted or margarine
1 Cup Milk To 7/8 C, (7/8-1 C)
3 Cups Potatoes grated
3 Tablespoons Onions finely chopped

Directions:

1. Grate potatoes just before using to prevent discoloration.

2. Combine all ingredients in a bowl and beat until well blended then add grated potatoes.

3. Drop in spoonfuls in large amounts of hot fat in a fry pan.

4. Spread out flat. Fry on medium heat until crisp and golden brown on under side.

5. Turn and brown the other side. Serve with sour cream or apple sauce or both.
