Homemade Zucchini and Sausage Soup

Ingredients:

1 Pound Zucchini sliced
1 Cup Celery chopped
1 Onion chopped
1/2 Pound Sausage bulk
1/2 Teaspoon Oregano dried -=OR=- Fresh Oregano
1/2 Teaspoon Basil fresh chopped *
2 Cloves Of Garlic minced (up to 3)
1 Green Bell Pepper chopped
28 Ounces Tomatoes chopped

Directions:

1. Brown the sausage, remove from skillet.

2. Add garlic, celery, onion, zucchini and gr pepper.

3. Saute lightly, about 3 minutes. Add sausage, seasonings and tomatoes.

4. Simmer, covered for 30 minutes. If soup becomes to thick, add chicken stock.
