Growing up in my family this was a Wednesday night staple Italian meal.

Ingredients:

1 Bay Leaf
1/4 Cup Flour
1/8 Teaspoon Pepper Freshly Ground
6 Ounces Tomato Paste
2 Teaspoons Salt coarse
1 Chicken Breast cut up
1/4 Cup Vegetable Oil
3 Tablespoon Garlic peeled
2 Teaspoons Sugar
8 White Onions peeled
1 Can Tomato (28 oz)

Directions:

1. Rub chicken with garlic.

2. Mince garlic and save.

3. Combine flour, 1 tsp salt, and pepper in large paper bag; shake chicken pieces until coated.

4. Heat oil in Dutch oven.

5. Brown chicken a few pieces at a time on all sides; drain on absorbent paper.

6. Pour off any oil remaining in pan.

7. Return chicken to Dutch oven.

8. Add garlic, tomatoes, tomato paste, onions, sugar, 1 tsp salt, and bay leaf. Cover.

9. Basting occasionally with sauce in the pan, simmer 1 hour or until chicken is tender.
