1. Heat oven to 425F Heat shortening and butter in baking pan, 13x9x2 inches, in oven until melted.
2. Mix flour, salt, 1/2 teaspoon ginger and the pepper.
3. Coat chicken pieces thoroughly with flour mixture.
4. Place chicken skin sides down in pan. Bake uncovered for 30 minutes.
5. Turn chicken; bake 15 minutes. Remove chicken.
6. Drain fat; line pan with aluminum foil. Return chicken to pan.
7. Mix honey, chili sauce and 1/2 teaspoon ginger; pour on chicken.
8. Bake 15 minutes, spooning honey mixture onto chicken every five minutes.
9. serve immediately or refrigerate and serve chilled.
