Honey Oat Biscotti

Ingredients:

2 Eggs unbeaten
1/2 Teaspoon Salt pepper; to taste
1 Teaspoon Baking Powder very important
1 Teaspoon Vanilla or more; if desired
1/2 Cup Butter or margarine Softened
3/4 Cup Honey Or Maple Syrup
1/2 Teaspoon Baking Soda (dissolved in a little warm water)
3 Teaspoons Cinnamon ground
1/2 Cup Walnut chopped
2 Cups Flour sifted
2 Cups Oats rolled

Directions:

1. Preheat oven to 375 F (will be turned down to 300 F for second baking).

2. Cream butter. Beat in honey, eggs and vanilla.

3. Combine flour, cinnamon, baking powder, baking soda and salt; mix well.

4. St into butter mixture. Stir in oats and nuts.

5. On greased baking sheet, shape dough into 2 (10x3x1-inch) logs.

6. Bake at 37 F for 12-15 minutes, or until lightly browned.

7. Cool 5 minutes; remove to cutting board. Cut each log into 1/2-inch strips; place on cookie sheet.

8. B at 300 F, 25-30 minutes or until crisp throughout strip.
