1. Combine peaches, sugar, andamp; honey in Dutch oven.
2. Cover andamp; let stand for 45 minutes. Position knife blade in food processor bowl.
3. Add orange, andamp; top with cover. Process until finely chopped.
4. Measure chopped orange, andamp; add an equal amount of water.
5. Cook covered, about 10 minutes or until orange peel is soft.
6. Set aside. Bring peaches slowly to a boil, stirring frequently until sugar dissolves.
7. Bring to a rapid boil, andamp; cook 15 minutes, stirring constantly.
8. Add orange mixture, return to a boil, andamp; cook about 25 minutes or until mixture registers 221 degrees on candy thermometer; stir mixture frequently.
