Hot Chile Sauce

Ingredients:

1/4 Cup Red Wine Vinegar
1 Teaspoon Dry Mustard (super fine)
1/4 Cup Olive Oil EVOO
1 Clove Of Garlic Peeled and crushed
2 Cups Water or vegetable stock

Directions:

1. Heat water to boiling; stir in chilies.

2. Boil uncovered 5 minutes; drain. Remove stems.

3. Place chilies, vinegar, mustard and garlic in a blender container; cover and blend until the chilies are finely chopped.

4. Gradually pour in oil, blending until smooth.

5. Makes about 1/2 cup of sauce. * You should use 6 to 8 dried Cascabel chilies in this recipe.

6. If they can't be found, then use a 1/2 of a medium Ancho Chile.
