Hot Onion Squares

This is a fun recipe that will help you make delicious onion squares to your own taste, simply add the right amount of cayenne pepper to suit you or substitute the cayenne with your favorite hot stuff, for instance finely sliced jalapenos would work well this too. Don't worry about the lard in the recipe, it is only a small amount and can be easily substituted for any of the available lard replacements. The simple preparation will give you either a fun appetizer in around 30 minutes or ample finger food for your party with a little more time for cutting up.

Ingredients:

2 cups Onions very thinly sliced
3/4 teaspoon Salt
7 tablespoons Lard
2/3 cup Milk
Cayenne Pepper to taste
1 Egg lg
2 cups Bread Flour
3/4 cup Sour Cream

Directions:

1. In a heavy skillet, cook the onion in 2 Tbsp lard, over mod-low heat, stirring, until it is golden.

2. Stir in the cayenne and salt and pepper to taste.

3. Reserve the mixture. Onto a sheet of wax paper, sift together the flour, baking powder, and salt.

4. Sift the mixture again into a bowl. Add the remaining lard, and blend the mixture until it resembles fine meal.

5. Stir in the milk, stirring until the dough is combined well.

6. Turn out onto a floured surface and knead it for 30 seconds.

7. Pat into a 9-inch square, press it evenly into a greased 9-inch baking pan and top with the onion mixture.

8. In a small bowl, whisk together the egg, sour cream, and salt and pepper to taste.

9. Pour this over the onion mixture, using a spatula to cover the onion mixture evenly.

10. Bake in the middle of a preheated 450f oven for 20-25 minutes or until it is cooked through.
