1. In a medium bread-bowl, dissolve yeast and sugar in warm water.
2. Add 2-3 cups of flour, one cup at a time, stirring constantly in one direction until a thick dough begins to form.
3. Once the dough begins to resist strongly, stir 100 times in one direction, or about one minute, and then let rest for 10 minutes.
4. Add salt, butter, and mahleb.Stir and continue adding flour using a wooden spoon.
5. When the dough stops taking flour, turn it out onto a lightly floured surface and knead for 8-10 minutes, or until elastic (add flour only when necessary).
6. Rinse the bowl, oil lightly, and return the dough to the bowl.
7. Cover with plastic and allow to rise until doubled in size, about 90 minutes.
8. Punch down dough and divide in 16 pieces.On a lightly floured surface, roll each piece, by hand, into 6-7 inch cigars.
9. Pinch the ends together to form oval loops.Place rings on an oiled sheet at leas 1/2 inch apart, then cover and let rise for 30 minutes.
10. Place sheets in the top two levels of the oven.
11. Just before sliding oven racks in, brush with egg wash and sprinkle sesame seeds.
12. Bake for 20 minutes or until brown (switch pan positions after 10 minutes).
13. Cool slightly on a rack and then wrap in a cloth to keep warm.
