Kosher Creole Sausages

Ingredients:

1 Clove Of Garlic
1/4 Teaspoon Chili Powder (I use Santa Cruz hot, but adjust this for taste) (up to 2)
1/2 Teaspoon Salt cayenne pepper
1/2 Teaspoon Pepper freshly ground
1 Bay Leaf crushed
1/2 Teaspoon Thyme Leaves dried
1/3 Cup Onion chopped
1 Pound Beef ground
1/4 Teaspoon Cayenne Pepper ground
1/4 Teaspoon Cayenne Pepper crushed
2 Tablespoons Parsley fresh

Directions:

1. Combine all the ingredients, mixing very well.

2. If you house is not too warm, allow the mixture to remain at room temperature for an hour or two to blend the flavors.

3. Wrap well and refrigerate until ready to use, up to 2 days.

4. The sausage can be frozen, although you might lose a little of the spiciness during storage.

5. Use as directed in other recipes, or shape into patties and grill, broil, or fry in a little oil until brown on both sides and cooked through.
