Leek Mustard Sauce

Ingredients:

4 Ounces Butter (softened)

1 Pound Leek cleaned and

2 Ounces Dry Mustard optional

8 Ounces Chicken Stock low fat, low sodium, plus 2 teaspoons

2 Ounces Dijon Mustard or honey mustard

1 Cup Heavy Cream

Directions:

1. In a heavy saucepan, heat butter.

2. Add leeks and saute until tender. Add dry mustard.

3. Cook 2 minutes. Add remaining ingredients. Cook until tender.

4. Adjust Seasonings. Strain through sieve. Serve hot.
