Ingredients:

2 Carrots sliced
2 Onions chopped
1 Celery chopped
10 Cups Water warm
2 Bay Leaves
2 Teaspoons Cumin Seeds
1/3 Cup Barley
2 Cups Lentils dried
2 Potatoes chopped
2 Tablespoons Parsley dried

Directions:

1. Combine all ingredients in soup pot and cook until the lentils are soft, about 1 hour.

2. Remove bay leaves before serving.

3. HELPFUL HINTS: Brown rice may be substituted for the barley.

4. This soup freezes well; save some for a busy day.

My family loves this (although we add salt at the dinner table)! I also made it to share with some seniors for a soup exchange. It freezes nicely!
