Ingredients:

1 Onion finely diced
1/4 Tablespoon Oregano dried leaf
3 Cloves Of Garlic crushed
1/4 Tablespoon Thyme Leaves
9 Cups Water warm
1/4 Tablespoon Basil
1 1/2 Cups Lentils
1/4 Bunch Parsley finely chopped
1/2 Teaspoon Pepper ground
1 Carrot cut small
1/4 Bunch Celery finely diced
2 Bay Leaves whole
28 Ounces Tomatoes diced in juice, OR pureed tomatoes
1 Teaspoon Salt (or to taste)

Directions:

1. Rinse lentils.

2. Place all ingredients in a heavy kettle and bring to a boil.

3. Lower heat and simmer for at least an hour. Add more water if necessary.
