Lime And Tequila Sweet Potatoes

Ingredients:

2 Pounds Sweet Potatoes peeled and diced
1/4 Cup Fresh Lime Juice ;
2 Tablespoons Honey liquid
1 Tablespoon Tequila (optional)

Directions:

1. Cut sweet potatoes into 3/4 inch thick slices.

2. Boil slices in a large pan on high heat for about 6 minutes.

3. Drain. Sweet potatoes should be just tender.

4. In a bowl mix together lime juice, honey and tequila.

5. Brush over potatoes. Grill on greased grate for 4 to 6 minutes.

6. Brush repeatedly with mixture and turn frequently.

7. Sweet potatoes are done when they are browned.
