Liver Loaf

Ingredients:

1 Pound Liver beef
1/2 Pound Sausage bulk
1 Cup Italian Bread Crumbs (1oz)
2 Eggs beaten
1 Teaspoon Worcestershire Sauce
1 Teaspoon Lemon Juice (2 lemons)
1 Teaspoon Salt ; (optional)
2 Slices Bacon TO 3 slices

Directions:

1. Cover liver with boiling water, and simmer 5 minutes.

2. Drain, reserving 1/2 cup liquid; cool. Chop liver; add sausage, breadcrumbs, eggs, Worcestershire sauce, lemon juice, salt, and reserved stock, mixing thoroughly.

3. Press into an 8-1/2x4-1/2x2-5/8" loafpan. Top with bacon, and bake at 350 degrees for 45 minutes.

4. Broil 2 to 3 minutes to crisp bacon slices.
