Marinated Zucchini

Ingredients:

3 Zucchini grated
4 Cloves Of Garlic minced (up to 2)
1 Teaspoon Basil dried, crushed
1 Tablespoon Red Wine Vinegar or less

Directions:

1. Saute the minced garlic in the oil in a small frying pan.

2. Peel and slice the zucchini diagonally into ovals.

3. Place them, not overlapping, on a large cookie sheet and spray them well on both sides with olive oil spray.

4. (Alternately, you can brush them with olive oil).

5. Broil them for 3 to 4 minutes on each side, until flecked with brown.

6. Mix the broiled zucchini slices with the sauteed garlic, the basil, the vinegar and salt to taste.

7. Cover and set aside to serve at room temperature.
