Mediterranean Stir-Fry with Angel Hair Pasta

Ingredients:

1/2 Pound Angel Hair Pasta broken in half
1/8 Teaspoon Cayenne Pepper up to 1, up to
3 Teaspoons Sesame Oil (chinese
1 Zucchini sliced
1 1/2 Cups Crushed Tomatoes canned
1 Red Pepper sliced
1 Eggplant cubed
1 Onion sliced
2 teaspoons Garlic crushed
1/2 Cup Spaghetti fresh basilChopped
4 Hearts Artichokes quartered

Directions:

1. Preheat oven to 350 degrees F Place 3 to 4 quarts of water on to boil.

2. Reserve 1 tablespoon of basil for garnish. In food processor or by hand, whisk together crushed tomatoes, garlic, cayenne and remaining basil.

3. Set aside. Heat wok or skillet over medium-high heat and spray with vegetable oil.

4. When wok is smoking, add onion and eggplant.

5. Toss 2 minutes Add zucchini, bell pepper and artichoke hearts.

6. Stir-fry 3-4 minutes. Add salt and pepper to taste.

7. Toss and remove to a bowl. Pour reserved sauce over vegetables.

8. Place bread in oven to warm. Add pasta to boiling water and cook 1 minute if fresh, 5 minutes if dried or follow package directions.

9. Drain. Add sesame oil to wok. When wok is smoking, add drained pasta.

10. Toss well for 2 minutes - the pasta should be crisp.

11. Divide pasta in 2 portions and place on individual plates.

12. Spoon vegetables over top.Sprinkle with reserved basil.
